I am allergic to pork, and bought this as an alternative. But it turns out, it is chicken wrapped in a pork casing!

I can't eat regular pork or turkey sausage without stomach issues, but I never have issues with Al Fresco's chicken sausage. The flavors are better than most other brands as well. Love this product! I feel that the andouille style sausage needs to have more kick, sometimes it tastes a bit reserved to be cajun.

I found this to be the perfect substitute for any recipe calling for traditional kielbasa. It has plenty of flavor but none of the nitrates and excessive sodium and fat that real kielbasa has. I've tried substituting other meats, but it really changes the final dish. This is the first substitute that hits the mark and makes the recipe taste right, and yet it's so much healthier.

We're eating healthier and al fresco smoked Andouille chicken sausage is fully cooked. I saute colorful peppers, onions, celery in olive oil, add whole grain wheat or wild rice with low sodium chicken stock. 15 minutes before the rice is done I mix in the sliced Andouille chicken sausage, raw shrimp and canned diced tomatoes, sometimes frozen okra. Make a salad and in no time, I have a wonderful, healthy meal!

Dinner Fully Cooked Chicken Sausage
Cooking Instructions

Grill
Grill sausage until golden brown over medium-low heat, about 7-9 minutes (turning frequently) and internal temperature reaches 165°F.

Oven Broil or Bake
Place sausages on a broiling pan about 8 inches from heat source; Broil until golden brown on all sides, turning frequently, about 7-9 minutes, and internal temperature reaches 165°F. Bake, in a single-layer, on a baking sheet at 350°F, for 7-9 minutes until golden brown and internal temperature reaches 165°F.

Pan Fry/Skillet/Sauté
Add 1 tablespoon of olive oil or vegetable oil to skillet. Place sausages in skillet and heat on medium high about 7-9 minutes, turning frequently, until golden brown and internal temperature reaches 165°F.

Microwave
Lay sausage on microwave safe plate, cover with a paper towel and microwave on high for 30 seconds.

Tips
Never pierce the casing.
Our all natural chicken sausages are lean, made with skinless chicken meat and fully cooked. Piercing the casing will let out any natural juices and in turn, dry out the sausage.

Save the slicing for last!
When grilling, sautéing, or even baking, brown whole links of sausage, let cool, then slice according to recipe. This will avoid a dry sausage and keep natural juices in.
