2 (12 oz) packages al fresco® Sweet & Smoky BBQ Chicken Sausage, fully cooked (use 6 links)

1 pound tomatoes, fresh, cut into small pieces

1 cup mango, chunked

1/2 cup yellow or orange bell pepper, chopped

1/4 cup scallions, fresh, chopped

1 cup avocado, fresh, cubed

1 cup black beans, drained & rinsed

1/2 cup parsley, fresh, chopped

2 tablespoons vinegar, white balsamic

3 tablespoons olive oil, extra virgin

1/4 teaspoon salt

1/2 teaspoon black pepper

6 skewers

Instructions
  • Preheat grill or grill pan.
  • Cut each al fresco Sweet & Smoky BBQ Chicken Sausage into 4 pieces and thread skewer.
  • Place on grill and cook on all sides for 5 minutes. Set aside and keep warm.
  • Meanwhile, in a large bowl, mix the tomatoes, mangos, pepper, scallions, avocados, black beans and parsley.
  • In a small bowl, mix the vinegar, olive oil, salt and pepper. Add to the tomato salad and gently toss.
  • Spoon the tomato salad onto six plates, placing one warm skewered sausage on top of the tomatoes. Serve immediately.
  • Serve with crispy or toasted pita bread.
    Will need 6 skewers for this recipe.
