1 12oz pkg al fresco Sweet Italian Chicken Sausage

4 cups Sweet onion (Vidalia), thinly sliced

3 tbsp Balsamic Vinegar

1 jar Roasted Red Peppers, drained and thinly sliced (7 ounces)

1/4 tsp Black pepper

1 Fresh Bread Baguette, halved lengthwise (8 ounce)

Instructions
  • Heat a large grill pan over medium-high heat.
  • Coat pan with cooking spray.
  • Add onion and al fresco chicken sausage.
  • Cook 1 minute.
  • Sprinkle with vinegar; cook 14 minutes or until sausage is done, turning occasionally
  • Add bell peppers, cook 1 minute.
  • Sprinkle with black pepper.
  • Arrange sausage mixture evenly over bottom half of bread.
  • Cut into 5 sandwiches.

Excellent and QUICK sandwich, improved with a mix of non-sweet grilled onions to go with the Vidalias, as well as some deli mustard. Just add a beer or three and a baseball game outdoors, and you've got a perfect summer treat.

I made these sausage, onion and pepper sandwiches for dinner yesterday and they were so delicious. I love these sausages so much that sometimes I cook them up plain and put them in a Martin's potato roll and it's so quick and satisfying. I love alfresco sausages!

We just love the al fresco italian chicken sausage just about any way it's prepared, but on a bun with Vidalia onions and bell peppers...oh my, what a treat! We also sometimes add some marinara sauce, but it's not really necessary...it's delish either way!!
