1 (12 ounce) package al fresco Sundried Tomato Chicken Sausage, fully cooked, sliced ¼" thick

12 ounces Dried orecchiette pasta

1 tablespoon Canola Oil

1 Small Onion, diced

2 Large cloves garlic, peeled and minced

¼ teaspoon Hot chili flakes

2 cups Tomatoes, diced

8 counces (about 3 packed cups) Baby spinach leaves, rinsed

2 ounces Crumbled feta cheese

Instructions
  • Bring a large pot of water to boil, cook pasta according to package directions.
  • Meanwhile, in a 12 inch frying pan or a 4 to 5 quart pan over medium-high heat, add canola oil and onion, stir often until lightly browned around the edges, 8 to 10 minutes.
  • Lower heat to medium and add garlic, chili flakes and chicken sausages.
  • Stir with a wooden spoon, breaking up sausage if necessary, until meat is beginning to brown, 5 to 10 minutes; if garlic begins to scorch lower heat. Add tomatoes and spinach; stir until spinach is wilted, about 2 minutes.
  • In a large bowl, mix pasta and sauce to coat; top with feta cheese

Love it. I did make a few changes. I added sun dried tomatoes in oil and used grape tomatoes . It was so tasty. A keeper for sure.

The title of this recipe is Orecchiette with Sundried Tomato Chicken Sausage and Spinach but the ingredients list shows 1 lb Firm-ripe tomatoes, not sun dried.... I plan to make this tonight for dinner but i'll use the sun dried.....

Anything with sundried tomatoes is good, but add al fresco sausage and your dish instantly becomes DELICIOUS. (Don't leave out the red pepper flakes; it makes the dish extra special!)

I like to add fresh basil to this recipe. It's super easy, quick and delicious. The sundried tomatoes give this dish a great flavor. I always keep a couple of packs of alfresco sausages in the freezer.
