Ingredients
1 package Al Fresco Hot Honey Fully Cooked Chicken Sausage
4 large eggs
1 medium sweet potato, peeled and diced
1 Tbsp olive oil
Salt & black pepper
1 avocado (sliced or diced)
Hot sauce or hot honey (for drizzle)
Directions:
- 1Toss diced sweet potato with olive oil, salt, and pepper. Air fry at 400oF for 12-15 minutes, shaking halfway, until golden and tender.
- 2Sauté sliced sausage over medium heat for 7-9 minutes until warmed and slightly brown.
- 3Whisk eggs with a pinch of salt and pepper. Cook for 3-5 minutes in non-stick skillet over medium-low heat, stirring gently, until soft and fluffy.
- 4Divide ingredients and assemble in a bowl.
