

"This Summertime easy prep recipe combines chilled veggies and grilled Spicy Jalapeño Chicken Sausage atop a crispy tostada."
Ingredients
1 package of al fresco Spicy Jalapeno Chicken Sausage
2 avocados, chopped
2 Roma tomatoes, chopped
2 Jalapeños, minced
1/4 cup Vidalia onion , chopped
Juice of 2 limes
1 tsp of kosher salt
1- 12oz can of corn, chilled
1/2 cup of cilantro leaves chopped
10 Tostadas
Directions:
- 1Grill al fresco Spicy Jalapeño Chicken Sausage for 8 - 10 minutes. Allow to rest 2 - 3 minutes before slicing. Slice sausages in 6 - 7 bite sized pieces.
- 2In a bowl, lightly mash chopped avocado with a fork. Combine mashed avocados with chopped Roma tomatoes, minced jalapeños and chopped onion. Add juice of two lines and one tsp of kosher salt. Mix Well.
- 3Drain canned corn of any liquid.
- 4Spread ¼ cup of avocado salsa on top of tostada. Top tostada with 2 tbsp of chilled corn, 5 - 6 cilantro leaves and 3 - 4 slices of grilled Spicy Jalapeño Chicken Sausage
- 5Recipe yields 10 tostadas. Serve and enjoy!
