

"Arroz con Salchicha {Sausage and Rice}! This slightly modernized take on a classic Cuban comfort food is the type of meal that becomes a staple when you’re looking for easy weeknight dinner ideas! It’s a one skillet meal that will appear on the menu again and again."
Ingredients
1 package al fresco Sundried Tomato chicken sausage, sliced
2 tbsp olive oil
1/4 cup green bell pepper, finely chopped
3/4 cup onion, finely chopped
2 garlic cloves, minced
1 1/2 cups long grain white rice
1 8oz. can tomato sauce
1 4oz. jar diced pimentos
2 1/2 cups chicken broth
1 bay leaf
1/2 tsp salt
Directions:
- 1Heat olive oil in large skillet over medium heat. Add sausage and saute for 3-4 minutes until golden brown.
- 2Add green pepper, onion, and garlic to pan and cook stirring often until veggies have softened. Stir in rice and cook for another minute.
- 3Add tomato sauce, diced pimentos, broth, bay leaf and salt. Stir ingredients to combine.
- 4Bring to a boil, then reduce to low heat. Cover and cook 10-12 minutes or until most of the liquid is absorbed.
- 5Turn off heat and allow rice to steam for another 10 minutes, do not lift the lid.
- 6Fluff rice with a fork and remove bay leaf before serving.
