Ingredients
1 package al fresco Sweet Apple Chicken Sausage, sliced
1 tbsp grapeseed or olive oil
1 cup green onion, chopped
1 cup carrots, chopped
1 cup red or green peppers, chopped
1 cup corn, canned or frozen
1 1/2 cups brown or white rice
3 cups chicken broth
2 medium chicken breasts, cooked and shredded
salt to taste
Directions:
- 1Heat olive oil in a large, deep skillet over medium heat. Add green onions, carrots, peppers, and corn to the pan. Sear for 3-5 minutes.
- 2Add chicken sausage. Cook for about 2 minutes.
- 3Add brown rice, chicken broth, and salt to taste. Stir until everything is well combined. Add chicken.
- 4Cover and bring to a boil. Reduce to a simmer (still covered) and cook until rice is tender and liquid is absorbed, about 18 minutes.
- 5Serve warm.
