

"Taking inspo from our Caramelized Onion & Cheddar chicken sausage, we partnered with local Boston sandwich shop, Roxy’s, to develop a completely crave-worthy grilled cheese sandwich. With perfectly toasted buttery bread, layers of gooey cheese, and the savory sweetness of caramelized onions & peppers, every bite is irresistibly indulgent. You NEED to try this recipe (trust us!). "
Ingredients
1 link Al Fresco Caramelized Onion & Cheddar Chicken Sausage, sliced into 3 long strips
2 large onions (yellow or sweet onions work best), thinly sliced
1 cup cherry peppers, sliced and deseeded
2 tbsp olive oil or unsalted butter
1 tsp sugar, optional for the caramelized onions/cherry peppers
2 slices of bread, sourdough or pain de mie
2 tbsp butter, for spreading
1 oz slice cheddar cheese
1 oz slice monterey jack cheese
1 oz slice muenter cheese
Salt, to taste
Freshly ground black pepper, to taste
Directions:
- 1Prepare the caramelized onion & cherry peppers: 1) Heat a large pan or skillet over medium heat; add the olive oil or butter. 2) Once the oil or butter is hot, add the sliced onions and peppers and stir to coat. 3) Reduce the heat to low or medium low (the key to caramelizing is slow cooking). 4) Stir the onions every 5-10 minutes to prevent burning (if they start sticking to the pan, you can add a little bit of water or a splash of broth to deglaze). 5) After about 20 minutes, the onions and peppers will start to soften and turn golden. At this point, you can add the sugar if you’d like them to caramelize faster and become sweeter. 6) Continue cooking for another 30-40 minutes, stirring occasionally; remove from heat and reserve for sandwich
- 2Cook the sausage in a skillet over medium heat, turning occasionally; set aside
- 3Butter one side of each slice of bread (if you like extra crispy grilled cheese, you can spread mayo on the outer sides of the bread as well)
- 4In a skillet over medium heat, place one slice of bread, buttered side down
- 5Layer on the cheese, followed by the chicken sausage, and a generous spoonful of the caramelized onion & cherry pepper mixture
- 6Top with another slice of bread, buttered side up
- 7Grill for 3-4 minutes on each side, or until golden brown and the cheese is melted
- 8Slice the sandwich in half and serve immediately while the cheese is melty and the sausage is hot; enjoy!
