1-8 oz pkg al fresco Apple Maple Breakfast Chicken Sausage

4 tbsp butter, unsalted

4 tomatoes, plum, roasted, cut into wedges

4 tbsp chives, snipped

4 cups fresh spinach, chopped

2 cups egg whites (16 eggs)

salt and pepper

Instructions
  • Preheat oven to 350°.
  • Melt 1 tbsp of butter in a medium sauté pan, then increase the heat to high, add the chicken sausage, and sauté until about three-quarters done, lightly browned.
  • Add tomatoes and spinach and sauté for 1 minute, then remove from heat. Add chives.
  • Season with several generous pinches of salt and grindings of pepper.
  • Place a 6" ovenproof non-stick skillet or well-seasoned 6" cast iron pan over medium heat. Add 3 tbsp of butter.
  • Add egg whites and spoon the al fresco chicken sausage mixture into the center of the egg whites.
  • Bake in the oven until set (10-12 minutes).
