1 (12 ounce) package al fresco Roasted Garlic Chicken Sausage sliced ½” thick

1 tablespoon olive oil, extra virgin

2 stalks lemongrass

1/2 pound mushrooms, sliced

4 small heads bok choy

1 tablespoon soy sauce, low sodium

1/4 teaspoon black pepper, ground

1/4 cup roasted almonds

Spicy Asian Slaw

1/2 cup green cabbage, shredded

1/2 cup red cabbage, shredded

1/2 jalapeno pepper, grated

1 teaspoon lemon rind, grated

1/4 cup lemon juice

1/4 cup peaches, diced

1/4 teaspoon black pepper, ground

Instructions
  • Heat oil in large wok or cast iron skillet. Add sausage and lemongrass and saute.
  • Add mushrooms and continue stirring. Add soy sauce.
  • When sausage is cooked almost through, add bok choy to wilt. Remove lemon grass and top with roasted almonds. To prepare the Spicy Asian Slaw: Mix the green and red cabbage with the jalapeno, lemon rind, lemon juice, peaches and black pepper. Let sit for at least 1/2 hour before serving. Option to grill fresh peaches with olive oil and use as garnish on slaw.
