

"Zucchini noodles are a great veggie swap for any “pasta” style dish. Quickly sauté and serve immediately! "
Ingredients
1 package Al Fresco Sweet Italian Style Chicken Sausage, sliced on the diagonal
1 medium onion, thinly sliced
2 cups carrots, shredded
16 oz zucchini noodles
1 ½ cups tomato sauce, warmed
1/2 cup shredded mozzarella cheese
Grated parmesan to taste
Directions:
- 1Prepare a non-stick skillet with cooking spray, pre-heat on medium high heat. Brown sausage links evenly on all sides 4 – 6 minutes. Keep warm.
- 2Re-coat the skillet with 3 tbsp olive oil and sauté onions on medium heat for 1 minute, add carrots and sauté for 2 minutes.
- 3Add zucchini noodles, stir with the carrot and onion mixture and cook 3 - 4 minutes. Season to taste with salt and pepper before serving.
- 4To serve, spoon a dollop of sauce in the center of 4 dinner plates, top with vegetables, spooning remaining sauce over and finish with sausage slices and cheese.
- 5Serve immediately.
