1 12oz pkg al fresco Sweet Italian Chicken Sausage, sliced into ½" pieces

3 qts Chicken broth

2 tbsp Olive oil

2 cloves Garlic, minced

2 Celery stalks, cut in half

2 Carrots, cut into small pieces

6 Green scallions

2 Bunches of escarole

1 cup Canned Soybeans

Salt and pepper to taste

Instructions
  • Sauté chicken sausage over medium heat until browned and internal temperature reaches 165 degrees.
  • Remove, slice into small pieces and set aside.
  • In a large saucepan, sauté garlic, celery, carrots and scallions for 3-5 minutes in oil over medium heat
  • Add chicken broth and washed escarole and bring to a boil.
  • Reduce heat and simmer for 45 minutes.
  • Add sliced sausage and soybeans and simmer for an additional 15 minutes.
