Grilled Chicken Sausage and Veggie Couscous Bowls

"It’s the ultimate quick and easy weeknight meal: minimal clean up, speedy prep-work, and something that everyone in our family will eat."

Ingredients

1 package al fresco Roasted Garlic Chicken Sausage, sliced

1 yellow pepper, sliced

1 red pepper, sliced

1 red onion, thinly sliced

2 cups mushrooms, quartered

1 zucchini, sliced

3 cloves garlic, minced

2 tablespoons fresh chives, minced

1 tablespoon fresh oregano, minced

olive oil

salt and pepper

couscous, for serving

Directions:

  • 1Preheat grill to medium-high heat.
  • 2Drizzle the sausage and vegetables with olive oil, season with salt and pepper, and sprinkle with minced garlic, chives, and oregano.
  • 3Grill sausage and veggies for 10-12 minutes, tossing halfway through to make sure it grills evenly.
  • 4Divide couscous, grilled sausage and veggies into bowls and serve.
