1 (14 ounce) tray al fresco Sweet Italian Chicken Sausage

3 tablespoons extra virgin olive oil

1 ½ teaspoons rice vinegar (white balsamic vinegar may be substituted)

1 tablespoon honey

¼ teaspoon black pepper, freshly ground

1 teaspoon ginger root, grated

1 teaspoon lemon rind

2 teaspoon lemon juice, freshly squeezed

¼ cup fresh mint, fresh,thinly sliced and 5 sprigs for garnish

3 cups green beans, fresh, blanched and chilled

½ cup red onion, thinly sliced

1 pound watermelon, rind removed and cut into 5 1” thick triangular wedges

5 ounces feta cheese (brick piece) and cut into 5 triangular wedges

cooking spray, extra virgin olive oil

Instructions
  • Set the grill to medium-low heat and grill the sausage to an internal temperature of 165 ° F, turning frequently. Allow to rest for 5 minutes, then slice on the diagonal 1/4" thick.
  • Meanwhile, make a vinaigrette in a small mixing bowl. Whisk together the olive oil, vinegar, honey, black pepper, ginger root, lemon juice and lemon peel and thinly sliced mint. Add in the green beans and red onion, toss. Set aside.
  • To grill the watermelon, lightly coat with the cooking spray and grill over heat until nicely charred, about 1 minute per side, transfer to plates.
  • Top the watermelon with the green bean salad, and arrange slices of the sausage around. Finish with a wedge of the feta cheese and garnish with a sprig of the fresh mint. Drizzle with any remaining salad dressing. Serve immediately.
  • Note:  Green bean salad can be made ahead of time and chilled.
