Ingredients
1 package al fresco Sweet Italian Chicken Sausage, thinly sliced
8 oz. pasta, cooked
1 tbsp olive oil
1 tsp minced garlic
1 cup sun dried tomatoes
1 cup basil pesto
15.5 oz. chickpeas rinsed and drained
Optional: 1 tbsp nutritional yeast
Directions:
- 1Heat oil in pan over medium heat. Add chicken sausage to pan and cook for 6-8 minutes until browned.
- 2Add minced garlic and sun dried tomatoes to pan. Cook for 2-3 minutes.
- 3Add chickpeas to the pan, mix and cook for 2-3 minutes. Add salt and pepper to taste.
- 4Stir in pasta and pesto and combine.
- 5Top with nutritional yeast if desired.
