1 12oz pkg al fresco Spicy Jalapeno Chicken Sausage, sliced into ½" pieces

2 tbsp Butter

1 small Onion, finely chopped (about 1/2 cup)

1 Red Bell Pepper, seeds and ribs removed, chopped

1/4 tsp Cayenne Pepper

1/2 tsp Coarse Salt

1 can Corn (drained)

2 Plum tomatoes, cored and chopped (1 cup)

1/2 cup Whole milk

Instructions
  • Cut the pepper in half and clean out the seeds and then chop the onion into fine pieces.
  • Slice the chicken sausage into 1/2" pieces. Chop the tomatoes into 1/2" pieces and reserve.
  • In a large skillet, melt butter over medium heat.
  • Add onion, bell pepper, cayenne, and 1 tsp salt.
  • Cook, stirring occasionally, until onion is soft, add the chicken sausage and cook for about 5 minutes.
  • Then add corn and chopped tomatoes, cook, stirring often, until corn is tender and tomatoes have softened, about 10 minutes.
  • Stir in milk; remove from heat.
  • Serve immediately.
