Spicy Jalapeno Chicken Sausage Tostadas with Cilantro Cream Sauce

1 12oz package al fresco Spicy Jalapeno Chicken Sausage, chopped

1 tsp canola oil

1 cup finely chopped onion

8- 6" corn tostadas (may substitute with corn tortillas)

2 cups chopped fresh tomatoes, drained

1 cup shredded Mexican cheese blend

2 cups shredded romaine or iceberg lettuce

1 lime (1/2 tsp zest, 2 tbsp juice)

1 cup light sour cream

1/4 cup chopped fresh cilantro, packed

Instructions
CILANTRO CREAM SAUCE
  • In small mixing bowl blend lime zest, lime juice, sour cream and cilantro. Cover and chill.
TOSTADAS
  • Preheat oven to 350°F.
  • Over medium heat, in a heavy, medium nonstick skillet, heat oil. Add sausage and onions and sauté until sausage is hot, about 3 to 4 minutes, stirring occasionally.
  • Place tostadas on baking sheet.
  • Portion 1/3 cup sausage evenly atop tostadas
  • Layer each with 1/4 cup tomatoes and 2 tbsp cheese.
  • Bake until cheese melts, about 3-4 minutes (if substituting for tortillas, until slightly crisp and golden, 6-8 minutes). Remove from oven.
  • Sprinkle 1/4 cup lettuce and drizzle 1 tbsp of Cilantro Cream Sauce over lettuce of each tostada. Serve immediately with remaining sauce.
