Spinach & Orzo Salad with Sweet Apple Chicken Sausage

Spinach Orzo Goat Cheese Cranberry and Al Fresco Apple Chicken Sausage Bowl

1 package Al Fresco Sweet Apple Chicken Sausage, 1/2" slices

8 oz. orzo pasta

4 cups baby spinach, chopped

1/2 cup sliced almonds

1/2 cup dried cranberries

2-4 oz. crumbled goat cheese

1/4 cup olive oil

3 Tbsp white balsamic vinegar

1 Tbsp honey

1/2 tsp kosher salt

1/4 tsp black pepper


  • 1Slice and sautee Al Fresco Sausage in a few teaspoons of oil until browned
  • 2Cook orzo per package directions, then rinse with cold water
  • 3Whisk white balsamic vinegar, honey, salt and pepper and slowly drizzle into the olive oil while whisking until emulsified
  • 4Mix ingredients together with ~ one third to half of the dressing. Garnish with extra goat cheese and parsley.
