1 pkg al fresco Sundried Tomato Chicken Sausage

1 tsp Olive oil

1/2 cup Sundried tomatoes with oil removed

1/3 cup water

1 14 oz can Vegetable broth

1 3/4 cup Israeli or Moroccan couscous

1 cup Parsley, chopped

1/2 cup Feta cheese, crumbled

12oz Artichoke hearts in oil, undrained

Black pepper to taste

Instructions
  • Sauté chicken sausage in oil over medium heat until browned.
  • Remove, slice in 1/2" pieces and set aside.
  • Place 1/3 cup of water and broth in a large saucepan and bring to a boil
  • Stir in couscous
  • Cover, reduce heat and simmer for about 8 minutes.
  • Remove from heat, stir in tomatoes, chicken sausage pieces, parsley, artichoke hearts and feta cheese and serve.
