1 12oz pkg al fresco Sundried Tomato Chicken Sausage

1 tbsp olive oil

1 clove garlic, minced

1 1/2 cups rice, uncooked

2 cups mushrooms sliced

3 onions, chopped

3 cups chicken broth

1 tsp basil

Instructions
  • In a large skillet, heat the olive oil.
  • Add chicken sausage and cook over medium heat until browned.
  • Remove chicken sausage from skillet, slice into 4" pieces. Set aside.
  • Add rice and garlic to skillet and cook stirring constantly until rice is lightly browned
  • Add mushrooms and onions
  • Continue cooking until mushrooms are tender
  • Stir in chicken broth and basil
  • Bring to a boil; cover and simmer for about 15minutes.
  • Gently stir in chicken sausage and continue simmering until rice is tender.
  • Tastes great topped with shredded parmesan cheese.
