1 (12 ounce) package al fresco Sweet Italian Chicken Sausage, fully cooked, sliced on bias 1/2" thick

1 cup (8 ounces) orzo pasta, cooked according to package instructions

3 teaspoons extra virgin olive oil, divided

1 cup onion, white, fresh, chopped

3 cloves garlic, fresh, minced

2 ounces white wine, Pinot Grigio (may substitute chicken broth for wine)

1 (28 ounce) can tomatoes, diced, unsalted & drained

2 tablespoons parsley, fresh, chopped

1 tablespoon capers

1/2 teaspoon oregano

1/2 teaspoon basil, dried

1/4 teaspoon crushed red chili pepper

1/4 teaspoon black pepper

1/2 cup feta cheese, crumbled

Instructions
  • In a large skillet, brown sausages in 2 teaspoons oil.
  • Remove and keep warm. In the same pan, saute onion in remaining oil until tender.
  • Add garlic and wine; cook 1 minute longer, stirring to loosen browned bits from pan.
  • Stir in the tomatoes, parsley, capers, oregano, basil, pepper flakes and pepper.
  • Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • Stir in orzo and sausage; heat through. Sprinkle with cheese. Serve Immediately!
