Chicken & Cauliflower Rice Burrito Bowl

Al Fresco Spicy Jalapeno Burrito bowl with fresh vegetables and cauliflower rice

"A better-for-you twist to the classic burrito bowl with Al Fresco’s Spicy Jalapeno Chicken Dinner Sausage and cilantro lime cauliflower fried rice."

Ingredients

1 package Al Fresco Spicy Jalapeno Dinner Sausage, sliced

2 Tbsp olive oil

2 medium red or yellow bell peppers, halved and thinly sliced

2 10oz packages frozen riced cauliflower

¼ cup fresh cilantro, chopped

3 Tbsp fresh lime juice

½ tsp kosher salt

1 large avocado, peeled, pitted and diced

½ cup drained and rinsed black beans

½ cup frozen corn, thawed

½ cup pico de gallo

1/3 cup cilantro lime dressing

Directions:

  • 1In a large skillet, heat oil over medium-high heat. Add Al Fresco chicken sausage and peppers; Sauté for 8 minutes or until browned and tender. Stirring occasionally.
  • 2Prepare cauliflower rice in microwave per packaging directions; Stir in cilantro, lime juice and salt.
  • 3Divide cauliflower rice mixture into 4 bowls; top with avocado, beans, corn, pico de gallo and sausage. Drizzle bowls with dressing.
