Sausage & Cheddar Egg Bites

1 package AL Fresco Country Style Breakfast Links

12 large eggs

½ medium onion, chopped

½ medium red bell pepper, diced

½ tsp salt

¼ tsp garlic powder

¼ tsp black pepper

¾ cup shredded cheddar cheese, divided


  • 1Preheat oven to 350°F.
  • 2Slice and sauté Al Fresco chicken breakfast links in a few teaspoons of oil until browned.
  • 3In a large bowl, whisk together eggs. Add the onion, pepper, spices, browned sausage, and ½ cup of the cheese.
  • 4Spray one 12 cup muffin tin heavily with cooking spray. Using ½ cup measure, fill muffin cups. Top with remaining cheese.
  • 5Bake at 350°F for 20 to 25 minutes or until the muffins are set.
  • 6Garnish with minced parsley.
